Meal Ideas this Week

It's the end of the month which means I don't buy a lot of food. I have all but spent my monthly grocery budget and will be using mostly what's out of my pantry.
However in looking the ads over here are some meal ideas I planned:
Breakfast:
  • Cereal: Score some great deals at Smith's on cereal and free milk. I have a lot of Kellogg's coupons so I have to find room to freeze my milk. Two gallons free for every 4 boxes of cereal. Make sure you read the details on GrocerySmarts lists to cash in on that deal. Macey's & Fresh Market have select varieties of Kellogg's for only $1 a box
  • Yogurt: Get Yoplait single serve cups for as low as .37 a cup at Ream's. The Associated Food Stores have their large 32 oz containers for 1.50
  • French Toast: Cheap bread at Smith's and Macey's. Fresh Market has eggs 1.50 a dozen plus free juice
Lunch:
  • Did you score some free lunch meat last week? If not Ream's has Carl Buddig for 1.99 (10 oz) Smith's has cheap bread. We like Grandma Sycamore's and Ream's has it for 1.67 a loaf this week
  • Macey's has their store brand chili for .68 a can. Serve on tortilla chips (Macey's has Santita's for 1.48 a bag) with cheese for lunch (check out my post on cheap cheese at Target)
  • Canned Soup- Did you score some last week with Smith's big sale?
Dinner:
Here are some good ideas for sides to go with your meals:
Fruit:
  • Apples .88/lb Sunflower
  • Apples .33/lb Rancho
  • Red Grapes .99/lb Rancho
  • Oranges .38/lb Macey's
  • Bananas .47/lb Fresh Market
Salad Fixings:
  • Ream's is the place to shop their produce is cheap this week!
Other Sides:
  • Potatoes .88 for 10 pounds at Fresh Market
  • Variety of Squash .59/lb at Ream's
  • Steamed Carrots - Baby Carrots 1 pound bag at Sunflower for .87 each
  • Pasta- American Beauty 24 oz is only 1.29 at Ream's

This is a big batch. However it freezes well. And is very versatile below I listed some variations I am going to use with the leftovers.

10-12 pounds pork shoulder butt roast (don't substitute a leaner cut of pork or it will be dry)- Pork Butt Roast is on sale at Ream's for 1.09/lb
1 bottle liquid smoke (you can find it with the steak and BBQ sauce at the store)
2 tablespoons sea salt (or hula salt if you can find it)
1 1/2 cups water

Preheat oven to 375 degrees.

Trim roast of large pockets of fat (but leave some fat on there to help the pork stay tender while cooking). Place pork in large roasting pan (the aluminum, deep roasting pans you can buy at the grocery store work great if you don't own a heavy-duty roasting pan). Rub 2-3 tablespoons of sea salt into pork. Pour the bottle of liquid smoke over and around the pork. Pour the water around the pork. Cover roasting pan TIGHTLY with two layers of aluminum foil.

Bake for 5-7 hours (don't uncover while baking - let the steam and heat work it's magic!).

*Crock pot Method- Follow instructions however cook on low in crock pot for 14-16 hours.

Shred with two forks and serve with rice. Note this is not a saucy meat. Next time I am going to serve it with gravy over my rice.

Shredded Pork Sandwiches

Leftover Kalua Pork
BBQ Sauce (did you get some cheap BBQ sauce last week at Smith's?)
Buns
Mustard (optional)
Mayo (optional)

I don't like an overwhelming flavor of BBQ sauce. Therefore I re-heated the meat and had my family pour the amount of BBQ sauce they wanted on their sandwiches individually. It was delicous. I like a litte mustard and mayo with my sandwich as well.

Shredded Pork Tacos

Leftover Kalua Pork
Salsa (amount to your taste)
Can of Pinto beans rinsed and drained
Tortillas
Toppings (Tomato, sour cream, lettuce, cheese) Ream's has lots of great produce on sale. Smith's sour cream is only 1.00)

Mix together pork, salsa and beans in frying pan. Reheat over medium heat. Add water if needed. Cook until meat is thoroughly heated about 10 minutes.
Wendy's Simple Crock Pot Roast and Vegetables
This is my sister-in-law Wendy's recipe

Roast (1.69 Smith's)
Carrots, peeled and sliced
Potatoes, peeled and cubed or sliced (Fresh Market .88 10 pound bag)
Dried onions
Salt
Pepper
Garlic powder
Worcestershire sauce

Spray crock pot with non-stick spray. Layer potatoes on bottom then carrots. Put roast on top sprinkle with remaining ingredients (no real measurements for spices just add to your taste)
. Cook on low for 8-10 hours.
Slow Cooker Italian Beef for Sandwiches

1 1/2 cups beef broth
1 cup water
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon onion salt
1 teaspoon dried parsley
1 teaspoon garlic powder
1 bay leaf
1 (.7 ounce) package dry Italian-style salad dressing mix (such as Good Seasons brand find it by the dry packets of Ranch Dressing)
1 (5 pound) Beef roast (1.69/lb Smith's)

Combine water and beef broth with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix. Whisk to combine.

Place roast in slow cooker, and pour salad dressing mixture over the meat. Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork (I did this step about 45 minutes before eating so the shredded meat had time to absorb more of the juices in the crockpot). Serve on crusty rolls with cheese, if desired.
