Dinner Ideas this Week


Sorry this post is so late. I have been sick this week. It's hard to think about dinner ideas with an upset stomach.

Meal planning this week is a bit trick if you are just starting to stock your pantry. The focus was on snack stuff for the Super Bowl. But no need to fear I included some recipes that stretch your dollar.

I did find a lot of deals on items for Mexican dishes and pork roasts so you will see and emphasis on that this week. Ground beef is priced okay but I included dishes that stretch the meat so you don't have to use a lot. Sorry no chicken recipes because chicken was not a good deal this week.

Side Dish ideas to go with your Dinners:

Toss Salad:

Taco Soup with Black Beans
Fix it and Forget It Cookbook

1 lb. ground beef (Fresh Market, Sunflower, Macey's)
Small onion or 1-2 T. dried onion
28 oz. can crushed or diced tomatoes (Smith's)
15 1/4 oz. can corn, undrained
15 oz. can black beans, undrained (Harmon's)
15 1/2 oz can red kidney beans or pinto, undrained (Harmon's)
1 envelope Hidden Valley Ranch Dressing mix (Walmart best price)
1 envelope dry taco seasoning (Harmon's)

Toppings:
Tortilla Chips (Macey's)
Shredded Cheese (Smith's)
Sour Cream (Ream's)

Pulled Pork Sandwiches

2-3 pound Pork Roast (Macey's, Fresh Market)
1 small onion
12 oz bottle BBQ Sauce or Homemade BBQ Sauce (Smith's)
1/4 c. honey (optional)
Hamburger Buns (Ream's, Macey's)

For best results put your pork in the crock pot the night before with a few inches of water. Slice the onion and lay on top of roast. Cook on low overnight*

In the morning discard onion and drain water. Shred pork add BBQ sauce and honey and cook on low until ready to serve.


Homemade BBQ Sauce
Recipe is for about a 2 pound roast
1 c. applesauce
½ c. ketchup
1 c. brown sugar
6 Tbsp lemon juice
½ tsp salt
½ tsp. pepper
½ tsp paprika
½ garlic powder
½ tsp cinnamon

Bring boil, remove heat and cool. Pour over shredded pork and cook on low until ready to serve. Om
it honey when using homemade BBQ sauce.


Tacos

Ground Beef Fresh Market, Sunflower, Macey's) I stretch my meat and add a can of pinto beans (on sale at Harmon's)
Taco Seasoning (Harmon's)
Lettuce (.Reams)

Tomato (Ream's)

Shredded Cheese (Smith's)

Olives

Salsa (Macey's or Smith's)

Tortillas- Flour ( Fresh Market, Macey's)

Tortillas- Crunchy Corn ( Harmon's)


Quick Homemade Salsa:
1 small can spice tomatoes (Smith's)
1 can diced green chilis

1 bunch green onions, thinly sliced
(Sunflower)
2 cloves garlic, minced

Cilantro to taste
(Sunflower)
2 T. vinegar

1 T. sugar

Salt & Pepper to Taste


Mix together and serve with tortilla chips.

Crock Pot Ham and Scalloped Potatoes

Diced Ham

*You can buy a pre-diced package of Farmland ham at Walmart by the hot dogs and lunch meat for about 2.50 combine it w/ coupon SS 1/31 for $1/1*

8-10 medium potatoes, peeled and thinly sliced (Smith's)

1 small onion thinly sliced

1 cup grated cheddar cheese
(Smith's)

1 can cream of chicken soup

Salt & Pepper to Taste

Paprika (optional)


Spray slow cooker with no-stick spray. Layer bottom of crock pot with half of potatoes, ham and onions. Sprinkle with salt, pepper and half of cheese. Repeat with the remaining ingredients. Spoon soup over top of potatoes. Cover and cook on low 8-10 hours or 4 hours on high. For a creamier sauce add 3/4 soup can of milk.


Steak & Baked Potatoes:

Another note:

Although I try, I may not know the best prices on every item. So I will put a reference as to what is advertised as the lowest price but Walmart or no-name brand may still beat it. For example a couple of my recipes call for beans. Harmon's is the only store with beans on sale this week. Sometimes Harmon's best price is still a bit steep. But I figure it's good to have it on hand for price matching if you need it.
