The Pampers Baby Dry and the Huggies Snug and Dry were the only ones on sale. One of my coupons specified Pampers Overnights but it still rung up valid for the Baby Dry diapers. Good info if you don't have quite enough coupons.

Recipe Ideas for This Week

This week was kind of a stretch for me. I usually am a boneless, skinless chicken, ground beef or beef roast of some sort kind of gal. But what I found the best deals on was pork, chicken legs or thighs and whole chicken. So I had to dig deep on some good recipes. But I found some I think you might like. Here are some meal ideas this week:

Sides that would work great for any of these meals are:
  • Baked or Mashed Potatoes (on sale at Albertson's a 5 pound bag for .78)
  • Sour Cream (.88 Ream's)
  • Steamed Broccoli or Cauliflower (Broccoli Crowns & Cauliflower .68/lb Fresh Market)
  • Steamed Carrots (Ream's 2 pound bag mini carrots 1.69)
  • Garden Salad ( Fresh Market - Iceberg Lettuce .99 each, radishes .50 each, green onions .50 each, broccoli and cauliflower .68/lb)
  • Caesar Salad (Romain lettuce .77 each at Reams, Parmesan Cheese from Costco, Croutons from Walmart)
Crock Pot Rotisserie Chicken

*This recipe is forgiving. Don't spend a lot of money on spices if your missing one. Also great places to find cheap spices is Walmart, Winco's bulk section or the Dollar Stores.

--1 whole chicken, skinned (4-5 pounds)- on sale at Albertson's for .88/lb
--2 tsp kosher salt (I used regular table salt tasted great)
--1 tsp paprika
--1 tsp onion powder (didn't have any and it turned out okay)
--1/2 tsp dried thyme
--1 tsp Italian seasoning
--1/2 tsp cayenne pepper (we don't like spicy but I added it anyway and it turned out great)
--1/2 tsp black pepper
--pinch of chili pepper (probably not necessary)

--4 whole garlic cloves (optional)
--1 yellow onion, quartered (optional)

I used a 6 quart crock pot for a 5 pound bird. It fit nicely.

Skin the chicken and get rid of the neck and other stuff from the cavity. I skin whole chickens because I hate the idea of the chicken fat simmering all day in the crock plus it's better for dieters.

In a bowl, combine all of dried spices. Rub the spice mixture all over the bird, inside and out. Plop the bird breast-side down into the crock pot.

Shove 4 whole garlic cloves and a quartered onion inside the bird.

Do not add water.

Cover and cook on high for 4-5 hours, or on low for 8. The meat is done when it is fully cooked and has reached desired tenderness. The longer you cook it, the more tender the meat.
BBQ Chicken Legs

1 or 2 bottles BBQ sauce (Walmart best price)
Chicken Legs (.88/lb Albertson's or Sunflower Market)

Place chicken in glass pan. Pour water over chicken until barely covered. Cover with tinfoil. Bake at 275 for 1 to 1 1/2 hours. Pull chicken out from oven. Drain off water. Pour barbecue sauce over chicken. Replace tinfoil. Bake at 300 for 1 hour.
Crispy Oven-Fried Chicken
Eat and Be Lean Cookbook

1 cup flavored breadcrumbs (or plain breadcrumbs with 1 tsp. poultry seasoning) (Walmart and Winco's bulk food section have the best price)
2 Tbsp. Parmesan Cheese (I buy mine at Costco for the best price. It is a big bag but you can freeze it)
1 Tbsp. dried parsley flakes (Walmart, Winco or Dollar Store)
6 chicken thighs (Albertson's and Sunflower .88/lb)
1 cup milk (I use my powdered milk from my food storage for cooking. Milk is not a good price this week)

Mix bread crumbs, Parmesan cheese and parsley together in a shallow bowl. Dip chicken in milk, let drain slightly. Dip chicken in bread crumbs or place bread crumbs in Ziploc bag and shake to coat.

Line a cookie sheet with foil. Spray with non-stick spray. Place chicken on pan. Spray tops of chicken thighs with non-stick spray. Bake at 400 for 45-60 minutes.

Salsa Verde Tostadas

*Plan Ahead: The recipe calls for cooked chicken or pork. I cook mine in a crock pot with a little water. Drain and shred. Make a double batch so you can freeze for future meals.

4 flour tortillas (Smith's - Mission Soft Tortillas 10 ct. 1.99 printable coupon for $1 off here. Forgot this item on my master list)
1/2 cup shredded Monterey jack cheese (1.49 Smith's)
1/2 cup shredded sharp cheddar cheese (1.49 Smith's)
2 1/2 cups cooked, shredded chicken or pork (Albertson's pork loin chops or roasts, boneless 1.69/lb)
1 cup green salsa (salsa verde) plus more for serving
1/4 cup plus 2 tablespoons chopped cilantro (Fresh Market .33 each)
1 can black beans, rinsed and drained (best price for canned beans is Walmart. Fresh black beans on sale for .89/lb at Ranch)
1/4 teaspoon ground cumin

Toppings:
Lettuce (Fresh Market .99 iceberg)
Tomatoes (Roma Smith's or Sunflower .88/lb)
Sour cream (Ream's .88)
Avocado (.77 each Sunflower)

Preheat oven to 400 degrees. Arrange the tortillas on a rimmed baking sheet. Sprinkle the cheese evenly over the tortillas, bake until golden brown, about 8-10 minutes.

Meanwhile, in a medium bowl, toss together the chicken (or pork), salsa verde, 1/4 cup cilantro, beans, and cumin (this can marinate all day if you like). Spoon mixture evenly over the tortillas and bake until heated through about 8 minutes.

Top warm tostadas with lettuce, tomato, and sour cream and other toppings as desired. Sprinkle with remaining cilantro. Serve immediately with additional green salsa if desired.
Smothered Pork Chops

*This is such a simple recipe I included even though the pork and sour cream were the only items on sale this week.

4 pork chops (Albertson's 1.69/lb)
1 can cream of mushroom soup, 10.75 ounce size
1/2 cup sour cream (Ream's .88 each)
1 cup fresh mushrooms, sliced or 1 can sliced mushrooms

Cook pork chops over medium-high heat in nonstick skillet about eight minutes, turning once until browned. Transfer to slow cooker. In skillet combine soup, sour cream and mushrooms. Pour over pork chops and mix until well coated. Cover and cook on high four hours.
Favorite Baked Pork

6 boneless pork chops (Albertson's 1.69/lb)
1 cup plain yogurt
2 cup Ritz crackers, crushed (Smith's 1.99 or less w/ coupon)
1/3 cup Parmesan, grated (Costco best price)
2 teaspoon garlic salt
1/2 teaspoon dried sage

Combine cracker crumbs, Parmesan, garlic salt, and sage in a gallon size food storage bag. Set aside. Coat pork chops in yogurt, then place in bag with cracker mixture, one at a time. Bake at 350 for about 45 minutes in a greased baking dish.

What no Master List....Change is Good!!


BIG CHANGE FOR ME!!
I am no longer going to be putting together a master list. Rather than me compiling this list for you, I am going to teach you how to do it yourself.

GrocerySmarts is the free website I have been compiling my master list from. A couple of weeks ago they contacted me and asked me if I would like to learn how to teach others to use their website!!! I have started to attend the classes and think they are well worth anyone's time who is trying to cut the cost of their grocery bill, with or without coupons, and soon I will be able to teach them to you. It is a free class teaching us all how to cut our grocery bill drastically! The website and classes are all free and there is no catch.

My first thought was, "What are you trying to sell me?". Yes I thought this was some gimmick to get me to be a salesman or some pyramid marketing tactic. How can their website and classes be free? Here is how: they earn the following ways:

  1. Advertisements on their website.
  2. On-line coupon prints. (When anyone clicks on the links and prints on-line coupons from their website they earn a few cents from the retailers.)
  3. Newspapers subscriptions. The NaCorp has worked with GrocerySmarts, due to all of the business they generate. Their users use newspapers for the coupons. This has drawn a lot of business for them and they have given GrocerySmarts the best deal around for subscriptions. I have done some checking around and have not found a better price!

So, that is how they earn their money.

I will soon be able to teach these classes. This is a hobby that I love. I have found ways to feed my family for less and I would love to have the opportunity to come and teach you how to make it work for you. Let me know if you are interested in coming. It is not sales pitch. It is a class to teach you what I had to learn on my own over the last couple of years. And also an opportunity to get GrocerySmarts rock bottom price on newspapers - if you want the coupons!

So in a couple of weeks I will be doing away with my master list and I will start teaching these classes once a week. I am doing a disadvantage by not teaching you their system. It is really that easy. This opportunity reminded me of the saying - Give a man a fish and feed him for a day. Teach a man to fish and feed him for a lifetime.

Bread Machines are not Worthless

Have a bread machine collecting dust or space? Well don't throw it away just yet. I don't have a Bosch or Kitchenaid (yet) but I discovered some of the possibilities of my bread maker.

I have tried to make bread in my bread maker and hated it. The crust is thick plus a third of your loaf is kind of odd due to the hole from the kneading arm. Then I discovered the dough setting. It is great!

The biggest draw back for me to make bread is time and mess. My bread machine does all the work. You just dump the ingredients in the machine (it does have to be in a certain order) and it mixes it, kneads it and raises it for me. I just take it out and put it in the pan.

I have tried bread, pizza dough and roll dough so far. Tonight it saved me $15. I wanted pizza but didn't want all the work.

So I put my ingredients in my bread maker and let it do the work for me. I pulled out my pre-shredded cheese, my pepperoni, sliced olives and sauce. Voila! Papa Murphy's will not get my business tonight.

Later I will post some of my favorite recipes to use in your bread maker. Don't have a bread machine? I see them all the time at yard sales for about $5. Can't wait for yard sale season? Check the thrifty stores or KSL Classifieds. But I wouldn't spend more then $10 or $15 for one.

Goodbye Albertson's


I live in West Jordan and I have two Albertson's near me. I thought it was pretty lucky the stores near me didn't close. However I went there on Saturday and found out they will closing their doors toward the end of February.

My Menu This Week


I thought I would share a few recipes that I thought went well with the items on sale this week at the grocery store.

Chicken and Broccoli Casserole
From SimplifySuppers.com

Boneless, skinless chicken breasts, cooked and cubed (on sale 1.88/lb Albertson's)
1 head broccoli, cut into bite sized pieces and cooked (.68/lb Macey's)
2 cup rice, cooked (bought at Costco 8.30/25 pound bag)
2 can cream of chicken soup
1 cup Mayonnaise
1/4 cup lemon juice, or juice from one lemon
2 cup cheddar cheese, grated (Macey's 1.99/shredded 8 oz)

Combine soup, mayonnaise, and lemon juice until well blended. Mix in chicken, broccoli and rice. Pour into greased 9x13 baking dish. Top with grated cheese and bake at 350 for about 40 minutes.

*Serve with rolls and salad*

Taco Soup With Black Beans
From Fix It and Forget It Cookbook
*Several of the canned items were on sale at Macey's case lot sale last week)

1 lb ground beef, browned and drained (on sale at Albertson's 1.88/lb)
28 oz. crushed tomatoes
15 1/4 oz. can corn undrained
15 oz black beans, undrained
15 1/2 oz can pinto beans or kidney beans
1 envelope dry Hidden Valley Ranch Dressing mix (best price Walmart)
1 envelope dry taco seasoning mix
1 small onion

Toppings:
Tortilla Chips (.89 Don Julio at Macey's)
Shredded Cheese (Macey's 1.99/shredded 8 oz)
Sour Cream (1.00 Smith's)

Combine all ingredients except toppings in slower cooker. Cook on low heat for 4-5 hours. You can also put everything in a big pot on the stove and simmer for 15-30 minutes and serve.

Ranch Parmesan Chicken
From SimplifySuppers.com

4 boneless, skinless chicken breasts (on sale Albertson's 1.88/lb)
1 package dried ranch dressing mix (bought at Walmart for best price)
1 cup Parmesan, grated
2 cups corn flakes, crushed (bought at Winco in their bulk section)
3 tablespoon butter, melted

Combine corn flakes, Parmesan and ranch dressing. Dip each breast in butter then roll in corn flake mixture. Place in bottom of shallow baking dish and bake at 350 for 45-60 minutes.

Serve with baked potatoes (on sale at Smith's 1.50 10 pound bag), Birdseye SteamFresh cooked veggie (Smith's for .99) and homemade bread

Cafe Rio Shredded Pork Tacos

Small Pork Roast (about 2 pounds) (Macey's .99/lb)
1/2 c. applesauce
1/4 c. ketchup
1/2 c. unpacked brown sugar
3 Tbsp lemon juice
1/4 tsp salt
1/4 tsp pepper
1/4 tsp paprika
1/4 tsp garlic powder
dash of cinnamon

Cook pork overnight on low with a small amount of water. Drain water and fat in the morning. Put all ingredients for sauce in saucepan and bring to a boil. Shred pork and return to crock pot. Pour sauce over shredded pork and cook on low until ready to serve. You may double the sauce recipe if you like it a little more saucy and add it throughout the day.

Awesome Meal Planning Website!


A friend of mine on Facebook sent me this website for meal planning to check out. In looking it over it looks awesome. The recipes look appetizing and you can customize and plan an entire month of recipes for your family. And it doesn't cost a thing!

This morning I was thinking to myself that I would love to transition and not have a huge shopping trip every week. It would be great to only have one big shopping day for the month. Then weekly if I found some deals that I shouldn't pass up to get those and the other essentials my family may need.
