Crock Pot Ham and Scalloped Potatoes
Fix and Forget It Cookbook
Diced Ham
8-10 medium potatoes, peeled and thinly sliced
1 small onion thinly sliced
1 cup grated cheddar cheese
1 can cream of chicken soup
Salt & Pepper to Taste
Paprika (optional)
Spray slow cooker with no-stick spray. Layer bottom of crock pot with half of potatoes, ham and onions. Sprinkle with salt, pepper and half of cheese. Repeat with the remaining ingredients. Spoon soup over top of potatoes. Cover and cook on low 8-10 hours or 4 hours on high. For a creamier sauce add 3/4 soup can of milk.

Easy and Simple Homemade Salsa
Homemade Salsa
from my sister MaryAnn
1 small can spice tomatoes (Smith's)
1 can diced green chilis
1 bunch green onions, thinly sliced (Sunflower)
2 cloves garlic, minced
Cilantro to taste (Sunflower)
2 T. vinegar
1 T. sugar
Salt & Pepper to Taste
Mix together and serve with tortilla chips.

2-3 pound Pork Roast

12 oz bottle BBQ Sauce or Homemade BBQ Sauce
1/4 c. honey
Hamburger Buns
*For best results put your pork in the crock pot the night before with a few inches of water. Slice the onion and lay on top of roast. Cook on low overnight*
In the morning discard onion and drain water. Shred pork add BBQ sauce and honey and cook on low until ready to serve.

Taco Soup with Black Beans

1 lb. ground beef
Small onion or 1-2 T. dried onion
28 oz. can crushed or diced tomatoes
15 1/4 oz. can corn, undrained
15 oz. can black beans, undrained
15 1/2 oz can red kidney beans or pinto, undrained
1 envelope Hidden Valley Ranch Dressing mix
1 envelope dry taco seasoning
Toppings:
Tortilla Chips
Shredded Cheese
Sour Cream
Brown ground beef with onion, drain fat. Combine all ingredients and cook on low in crock pot for 8 hours or on high for 4 hours. If you forgot or don't have time to use the crock pot, just combine in big pot and simmer on stove for about 15 to 30 minutes.

I don't like an overwhelming flavor of BBQ sauce. Therefore I re-heated the meat and had my family pour the amount of BBQ sauce they wanted on their sandwiches individually. It was delicous. I like a litte mustard and mayo with my sandwich as well.

This is a big batch. However it freezes well. And is very versatile below I listed some variations I am going to use with the leftovers.
10-12 pounds pork shoulder butt roast (don't substitute a leaner cut of pork or it will be dry)
1 bottle liquid smoke (you can find it with the steak and BBQ sauce at the store)
2 tablespoons sea salt (or hula salt if you can find it)
1 1/2 cups water
Preheat oven to 375 degrees.
Trim roast of large pockets of fat (but leave some fat on there to help the pork stay tender while cooking). Place pork in large roasting pan (the aluminum, deep roasting pans you can buy at the grocery store work great if you don't own a heavy-duty roasting pan). Rub 2-3 tablespoons of sea salt into pork. Pour the bottle of liquid smoke over and around the pork. Pour the water around the pork. Cover roasting pan TIGHTLY with two layers of aluminum foil.
Bake for 5-7 hours (don't uncover while baking - let the steam and heat work it's magic!).
*Crock pot Method- Follow instructions however cook on low in crock pot for 14-16 hours.
Shred with two forks and serve with rice. Note this is not a saucy meat. Next time I am going to serve it with gravy over my rice.

You Can Do It!
I have been using GrocerySmarts for a couple of years and I am well "seasoned" to the system and have forgotten the learning curve you can experience when just starting out. My mom has decided to use this system and helps me understand the feelings and frustrations that can come when you are just starting. I thought I would give some advice as you start this journey so you can succeed.
1- Remember this is not a marathon. You want to know how everything works and be a pro-shopper starting with your first trip. And I hope you are but it does take practice. Just like anything it comes with experience. You are learning a new saving system. You will learn, faster than you think. Don't give up too soon if you are discouraged.
2- In my class I mention this but want to say it again. The manufacturers put out their coupons about a month before there is a good sale to go along with their coupon. My mom was frustrated because she has been filing her coupons for a few weeks and has hardly used any. I had to remind her she is stock-piling her coupons and the sales will come.
3- Sales come in waves. Some weeks there are tons of hot items to buy and others there are few. It can be frustrating if you are on a low-week. You are excited and want a big cart full of items using your coupons. It will happen but it doesn't always happen every week.
I am actually glad there are not super sales every week because I would have to let some of them go by. I only have a certain amount of money I can spend each month and I would be sad I was missing out on too many good deals. Also every family's needs are different. My grocery list could be completely different from yours and my "on" week might be an "off" week for you.
4- The grocery lists are GREAT. I save hundreds of dollars on my groceries by using GrocerySmarts lists to buy my meat, dairy and produce as well as coupon items. Just this week I stocked up on some pasta that was an extremely low price even though I didn't have coupon to use with it. So use those lists for all your grocery needs don't just skim the coupon items.
5-Online Coupons- These coupons have the biggest learning curve. These coupons can be a great asset and a big pain. There is a bigger learning curve understanding the wording, the pages you have to sort through and what needs to be done to find an online coupon sometimes.
If you are a beginner and don't want to be over-whelmed skip the online coupons. I think of online coupons as an extra set of coupons. Not my main supply of my coupons. Make sure you check out my coupon-decoder to help with online coupon info. If the whole online coupon thing is going to discourage you, skip them. You won't be missing out on all the deals. In fact most of the time you have a coupon in your newspaper coupons already. These just give you some additional coupons.

Bissell Carpet Cleaner Deal!

Meal Ideas this Week
It's the end of the month which means I don't buy a lot of food. I have all but spent my monthly grocery budget and will be using mostly what's out of my pantry.
However in looking the ads over here are some meal ideas I planned:

Roast (1.69 Smith's)
Carrots, peeled and sliced
Potatoes, peeled and cubed or sliced (Fresh Market .88 10 pound bag)
Dried onions
Salt
Pepper
Garlic powder
Worcestershire sauce
Spray crock pot with non-stick spray. Layer potatoes on bottom then carrots. Put roast on top sprinkle with remaining ingredients (no real measurements for spices just add to your taste). Cook on low for 8-10 hours.
Slow Cooker Italian Beef for Sandwiches

1 1/2 cups beef broth
1 cup water
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon onion salt
1 teaspoon dried parsley
1 teaspoon garlic powder
1 bay leaf
1 (.7 ounce) package dry Italian-style salad dressing mix (such as Good Seasons brand find it by the dry packets of Ranch Dressing)
1 (5 pound) Beef roast (1.69/lb Smith's)
Combine water and beef broth with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix. Whisk to combine.
Place roast in slow cooker, and pour salad dressing mixture over the meat. Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork (I did this step about 45 minutes before eating so the shredded meat had time to absorb more of the juices in the crockpot). Serve on crusty rolls with cheese, if desired.

- Yogurt: Get Yoplait single serve cups for as low as .37 a cup at Ream's. The Associated Food Stores have their large 32 oz containers for 1.50
- French Toast: Cheap bread at Smith's and Macey's. Fresh Market has eggs 1.50 a dozen plus free juice
- Did you score some free lunch meat last week? If not Ream's has Carl Buddig for 1.99 (10 oz) Smith's has cheap bread. We like Grandma Sycamore's and Ream's has it for 1.67 a loaf this week
- Macey's has their store brand chili for .68 a can. Serve on tortilla chips (Macey's has Santita's for 1.48 a bag) with cheese for lunch (check out my post on cheap cheese at Target)

Wednesday...Free Admission to the Zoo
The Hogle Zoo offers FREE admission on the last Wednesday of the month, November - February! So this Wednesday is the last day for a while. The zoo is open 9am to 4pm.
Here are some great tips from Utah Deal Diva:
- Bring your own lunch! Food is pricey and not incredibly appealing, but the zoo grounds offer ample space for a picnic. I have young kids who still take mid-day naps, so we arrived early, ate snacks and ate a later lunch at home. It worked out well!
- If you're up for an early morning, try to arrive just after the park opens. It's virtually empty for a good hour or so and the kids have a lot of fun running around! {Just wear very warm clothes or plan on hitting the indoor exhibits first!}
- Wear layers. It's supposed to be a high of 41 with a rain/ snow mix on Wednesday, so you'll want to wear warm clothes, but there are a few indoor exhibits where you'll melt if you're all bundled up!

Smith's Deals - Prices Not Right?

GrocerySmarts list for Smith's had some super low prices but when my mom went shopping several of the items didn't match up. What the heck right? After doing some searching on the forums I found an answer. It seems that GrocerySmarts used a Smith's ad but later found out it was only for the Pleasant Grove and Orem are. Many of us have been requesting the pricing be fixed so hopefully GrocerySmarts will be updating their list with the Salt Lake Valley pricing. Also rumor has it that Smith's Marketplace has some of those great prices on items on the original list.

Steak Hoagies with Mushrooms, Onions, and Peppers

*Makes 4-6 large sandwiches
3-4 pounds sirloin steak, about 1 inch thick (Smith's 1.99/lb)
1 tablespoon sauté spice (equal parts black pepper, salt, and garlic powder)
2 tablespoons olive oil
1 onion, sliced thin (Smith's .50/lb)
1 red bell pepper, seeded and sliced thin
8 ounces white mushrooms, sliced thin
2 tablespoons steak sauce (I used A-1)
1/2 teaspoon dried oregano
4-6 (6 inch) sub rolls, slit partially open lengthwise
6 ounces thinly sliced deli provolone cheese
Adjust oven rack to upper middle position and heat oven to 450 degrees. Pat steak dry with paper towels and rub saute spice liberally into each side. Heat 1 tablespoon oil in large skillet over medium high heat until rippling. Cook steaks until well browned, 5 to 6 minutes per side (this is all the cooking time the steaks get so cook them according to your preference). Transfer to plate and tent with foil. Let them rest for five minutes, then slice thinly against the grain.
Meanwhile, add remaining oil, onion, bell pepper, mushrooms, and 1/2 teaspoon salt to empty skillet and cook until vegetables are softened and golden brown, 6 to 8 minutes. Off the heat, stir in steak sauce, oregano, and sliced steak until well combined.
Divide steak mixture among rolls and top with cheese. Arrange sandwiches on rimmed baking sheets and bake until cheese is melted and rolls are golden brown around edges, about 5 minutes. Serve.

1 c. mayo
2/3 c. canned milk
1 1/2 c. shredded cheddar cheese
2 tsp. lemon juice
Mix cream of chicken soup, mayo, canned milk, half of cheese and lemon juice together. Layer ingredients in 9x13 pan. First layer chicken, then broccoli, then pour sauce evenly over the chicken and broccoli. Sprinkle remaining cheese on top. Bake at 350 for about 30 minutes until bubbly. Serve with steamed rice.

(I don't know why the title is what it is because it uses hamburger not steak)
1 lb. ground beef (Smith's 1.59/lb)
half of onion, chopped (Smith's .50/lb)
12 oz. can V-8 vegetable juice
2-3 medium potatoes (.99 10 pound bag Ream's)
Can of cream of mushroom soup
Can of cream of celery soup
16 oz frozen mixed vegetables or vegetable of your choice
2 tsp. salt
Pepper to taste
Saute hamburger and onion, drain fat. Combine all ingredients in slow cooker. Cook on low 8-10 hours.

3 (14.5 ounce) cans whole peeled tomatoes (I used crushed because I was in a hurry)
1 (8 ounce) can tomato sauce
1 tablespoon olive oil
1 medium onion, minced (I used dry minced onion) (yellow onions on sale for .50/lb Smith's)
Salt
3 medium garlic cloves, finely minced (you can use minced or garlic powder)
1/8 teaspoon red pepper flakes (these do not add spice - just flavor!)
1 tablespoon dried basil
1/2 tablespoon dried oregano
1/2 pound ground pork (or just 1 lb hamburger, Smith's 1.59/1b)
1/2 pound ground beef
12 curly-edged lasagna noodles, broken into 1 inch lengths
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
3/4 cup ricotta cheese (do not use fat-free) (I used cottage cheese, Smith's 1.00)
Pulse the tomatoes with their juice in a blender or food processor until they are coarsely ground and no large pieces remain (in a food processor, that is about 12 pulses0.
Heat the oil in a 12-inch nonstick skillet over medium heat. Add the onion and 1/2 teaspoon salt and cook, stirring often, until the onion is softened and translucent, about 5 to 7 minutes. Stir in the garlic and red pepper flakes and cook until fragrant, about 30 seconds. Add the ground meat and cook, breaking apart the meat, until it is lightly browned and no longer pink, 5 to 6 minutes.
Scatter the broken lasagna noodles over the meat and then pour in the ground tomatoes and tomato sauce over the pasta. Stir in the basil and oregano. Cover, increase the heat to medium-high, and cook, stirring often and adjusting the heat to maintain a vigorous simmer, until the pasta is tender, about 20 minutes.
Off the heat, stir in half the mozzarella and half of the parmesan. Dot heaping tablespoons of the ricotta over the noodles, then sprinkle with the remaining mozzarella and parmesan. Cover and let stand off the heat until the cheese melts, 2 to 4 minutes. Serve.

1 pound ground beef
1 can tomato soup
1/2 cup salsa
1/2 cup water
6 Tortillas
1/2 cup cheddar or favorite mixed cheeses
Brown beef in skillet until well browned, stirring to break up meat. Pour off fat. Cut tortillas into 1" pieces. . Add soup, salsa, water, and tortillas. Heat to a boil. Reduce heat to low and cook 20 minutes, stirring occasionally. Top with cheese and serve.
