Breaded Garlic Chicken in Lemon-Butter Sauce

Breaded Garlic Chicken in Lemon-Butter Sauce
From Mel's Kitchen Cafe

*Note: if you prefer more sauce, since this makes a lighter, smaller amount of sauce, consider doubling the sauce ingredients.


4 boneless, skinless chicken breasts
1 cup seasoned flour (1 cup flour, 1 teaspoon salt, ½ teaspoon pepper)
5 cloves of garlic, finely minced
1 tablespoon parsley flakes or 1/4 cup chopped fresh parsley
2 tablespoons freshly squeezed lemon juice, from about 1 lemon
3 eggs
1/3 cup finely grated Parmesan cheese
1 tablespoon olive oil
5 tablespoons butter

Place the seasoned flour in a large gallon-size ziploc bag. Set aside. In a shallow pie plate, beat the eggs until mixed and add the Parmesan cheese. Whisk to combine. Set aside.

In a large skillet, melt one tablespoon butter and one tablespoon olive oil over medium heat. Let it begin to heat and sizzle while you prepare the chicken but be careful not to let the butter burn and turn brown.

Put the four chicken breasts in the bag with the seasoned flour, close the bag, and shake to coat the chicken in the flour. One by one, take the chicken out of the bag and dip into the egg/Parmesan mixture. Place the chicken carefully in the skillet with the hot oil/butter. Repeat with the other chicken breasts. Let the chicken cook on the first side, without moving or flipping the chicken, for 1-2 minutes until a nice, golden crust has formed. Carefully, using a wide spatula, flip the chicken and let it continue to cook for 1-2 minutes on the other side until it is golden brown. The chicken will flip easiest if it has had time to sizzle and cook to form a nice crust.  Remove the chicken to a 9X13-inch pan. Set aside while you make the sauce.

In the same skillet that you browned the chicken, melt the remaining four tablespoons butter. Add the minced garlic, lemon juice, and parsley. Simmer the sauce for 1-2 minutes, stirring and scraping up any browned bits that were on the bottom of the skillet.

Pour the sauce evenly over the chicken breasts and bake at 350 degrees for 35 minutes, until the chicken is cooked through. Serve over noodles, rice or potatoes.

10-12 Chicken Legs
1-2 bottles BBQ Sauce

Skin chicken legs and place in a single layer in a 9X13 pan.  Fill with water until chicken is covered.  Cover with aluminum foil.  Cook on 275 for 1 and 1/2 hours.

Drain chicken.  Evenly pour BBQ sauce on legs.  Recover with aluminum foil and bake at 325 for 1 hour.  Serve.

1/2 lb ground beef
1 Tbsp instant minced or 1 small onion, chopped
2 cloves garlic minced
1 pkg spaghetti sauce seasoning or 1 Tbsp brown sugar and 1 tsp oregano
2 Tbsp dried parsley flakes
1 28 oz can tomatoes, slightly blended
1 16 oz can tomato sauce
1 4 oz can mushrooms

Brown ground beef and onion.  Drain fat.  Add seasonings, tomatoes, tomato sauce, and mushrooms.  Stir to mix.  Simmer 25-30 minutes.

My Menu this Week.....

I have been so busy focused on deals I have not shared my menu ideas in a long time.  So I thought I would share my menu for this week.

I tend to only share dinner ideas because I hate making breakfasts and lunches.  So there isn't much creativity there.  Also I love trying new meal ideas but can't afford to make a mistake.

I LOVE Mel's Kitchen Cafe.  You will see I use a lot of her recipes because I know I can trust them.  So here are my dinner ideas.

SATURDAY: 
Date Night kids get pizza


SUNDAY:
  • Crock Pot Roast Chicken Rotisserie Style or Simple (Whole Chicken on sale Sunflower Market for .67/lb)
  • Mashed Potatoes (Walmart is selling them for about 1.27 a 10 pound bag)
  • Green Salad
  • Homemade Rolls (Don't make rolls?  I always scan the day old bakery rack for a deal on rolls)


 MONDAY:
  • Pulled Pork Sandwiches (Ream's has a Pork Roast on sale for 1.19/lb)
  • French Bread Rolls for Sandwiches  (Most of the time I don't have time to make rolls so I check the day old rack at the store for a good price and stick them in my freezer to keep them fresh
  • Corn on Cob (Ream's for .25 ea)
  • Twice Baked Potatoes (Again Walmart has been selling a 10 pound bag for about 1.27)
 
 TUESDAY
    • Here is how I am going to get the best price for the ingredients in this meal:  Will be shopping at Walmart and I am going to use this coupon for the cheese and get a good price at Walmart.  Rancho has mushrooms for .99 a package and will price match those.  Ream's has their frozen veggies for a good deal with their case lot sale so I will price match and buy a case worth.
  • Homemade Rolls  (Don't make rolls?  I always scan the day old bakery rack for a deal on rolls) 
  • Fresh Fruit (Sunflower has grapes for .67/lb, Macey's has cantaloupe for .25/lb)
WEDNESDAY

  • Meatballs with Cream Sauce (Ground Round 1.78/lb Macey's)
    • I will use my dried spices, not fresh to save on money.  When I get a chance I will make stop at Winco for their bulk section.  I stock up on items such as spices and pasta noodles.  I buy my oats from the LDS dry pack cannery but Macey's is having a sale on Quaker Oats)
  • Cooked Veggie (Ream's case lot sale)
  • Homemade Bread from Wednesday

Meatballs with Cream Sauce


Meatballs with Cream Sauce

MEATBALLS:
1 egg, lightly beaten
1/4 cup milk
2 T. ketchup
1 t. Worcestershire sauce
3/4 cup quick oats
1/4 cup finely chopped onion
1/4 cup minced fresh parsley
1 t. salt
1/4 t. pepper
1 1/2 lb. lean ground beef
3 T. flour

CREAM SAUCE:
2 T. butter
3 1/2 T. flour
1/4 t. dried thyme
1/4 t. salt
1/8 t. pepper
14 oz. can chicken broth (If you want your sauce thicker, cut down the chicken broth to 1 cup)
2/3 cup milk
2 T. minced fresh parsley

In a bowl, combine all of the meatball ingredients EXCEPT the beef and flour. Add beef and mix well. Shape into balls. Roll in flour, shaking off excess. Place 1 inch apart on cookie sheet and bake, uncovered, at 400 for 10 minutes. Turn meatballs, bake 8-10 minutes longer or until no longer pink.

Meanwhile, for the sauce, melt butter in a saucepan over medium heat. Stir in flour, thyme, salt and pepper until smooth. Gradually add broth and milk; bring to a boil. Cook and stir for 2 minutes, until slightly thickened. If using the full can of chicken broth, the sauce doesn’t thicken overly much, but it is delicious that way. If you want it slightly thicker, cut down the chicken broth to 1 cup. Drain meatballs on paper towels; transfer to a serving dish. Top with sauce and parsley. Serve over rice or egg noodles.

Hamburger Soup


Hamburger Soup
From Set for Life Cookbook

1/2 pound Ground Beef
1 onion, chopped
3 stalks Celery, diced
4 Potatoes, cubed
3 Carrots, diced
2 16 ounce cans Tomatoes
2 cups Cabbage, chopped (optional)
1 c. Corn
1/4 c. Brown Rice, Noodles or Macaroni
4-6 cups Water
1 large Bay Leaf
2-3 tsp Salt
1 Tbsp Worcestershire Sauce (optional)
Pepper to Taste

In larege pan brown ground beef with onion.  Drain well.  Add reamining ingredients.  Soup should not be too thick so add more water if needed.  Bring to a boil.  Lower heat, and simmer about 1 1/2 hours.  Remove bay leaf before serving.

Slow Cooker:  Brown ground beef with onion.  Drain well.  Put all ingredients in slower and simmoer on low all day.

Approximately 12 servings.  

Mary Saurey's White Bread


Mary Saurey's White Bread (This bread recipe is my favorite)

2 pkg (2 Tbsp) yeast
1/4 c. Warm Water
4 Heaping Tbsp Sugar
1/2 c. Powdered Milk (optional)
4 c. Warm Water
1 Tbsp Salt
1 Cube Margarine or Butter, melted
10 c. Flour

Dissolve yeast in warm water (1/4 cup).  Combine sugar, margarine, salt, powdered milk and warm water in large mixing bowl.  Cool to lukewarm and add softened yeast.  Add 5 cups of flour and beat with mixer.  Let sit for 10 minutes.  Add remaining flour gradually and mix to a dough that won't stick to your hands or sides of bowl.  Knead lightly on floured surface for 8-10 minutes.

Place in greased bowl: cover.  Allow to rise in warm place for approximately an hour.  Punch down.  Let rise again until dough is double in size.  Knead and divide into 4 portions.  Mold into loaves and place in greased pans.  Let rise for about 15-20 minutes.  Bake at 350 degrees for about 45 minutes.

Cheesy Skillet Chicken and Rice with Green Beans

Cheesy Skillet Chicken and Rice with Green Beans

*Serves 4-6

4 boneless, skinless chicken breasts (about 1 1/2 pounds)
Salt and ground black pepper
2 tablespoons vegetable oil
1 medium onion, chopped
8 ounces white button mushrooms, brushed clean and quartered or sliced
4 medium garlic cloves, finely minced or pressed through a garlic press
1 ½ cups long grain white rice
4 cups low-sodium chicken broth
½ pound frozen or fresh green beans
1 cup shredded sharp or extra-sharp cheddar cheese
½ cup shredded Parmesan cheese

Pat the chicken dry with paper towels and season liberally with salt and pepper. Heat the oil in a 12-inch nonstick skillet over medium heat until the oil is rippling and hot. Carefully lay each chicken breast in the skillet and cook until the chicken is well browned on the first side, about 3-4 minutes. Flip the chicken with a pair of tongs and let it brown on the second side, about 3 minutes. Remove the skillet from the heat and transfer the chicken to a plate and set aside. Drain all but about 1-2 tablespoons oil from the pan.
Return the pan to medium heat. Add the onion, mushrooms, garlic and ½ teaspoon salt and cook, scraping the browned bits off the bottom and edges of the pan, until the mushrooms begin to soften and start to brown, about 6-8 minutes. Add the rice and continue to cook until the edges of the rice turn translucent, about 3 minutes. Add the broth and bring to a simmer. Add the chicken to the pan and cover, reduce the heat to low and cook until the chicken is no longer pink in the center and the rice is mostly cooked through, about 15 minutes.
Remove the chicken from the skillet again, brushing off any rice that sticks to the chicken back into the skillet. Cover the chicken with foil to keep warm. Stir the green beans into the skillet, stir the mixture well, cover and continue to cook on low until the beans and rice are tender, about 10 minutes. Stir in the cheese and season to taste with salt and pepper. Serve immediately.

French Bread Rolls

 
French Bread Rolls

*Makes about one dozen rolls
 
1 1/2 cups warm water (110 degrees F/45 degrees C)
1 tablespoon active dry yeast
2 tablespoons white sugar
2 tablespoons vegetable oil
1 teaspoon salt
4 cups all-purpose flour
 
In a large bowl, stir together warm water, yeast, and sugar. Let stand until creamy, about 10 minutes.
To the yeast mixture, add the oil, salt, and 2 cups flour. Stir in the remaining flour, 1/2 cup at a time, until the dough has pulled away from the sides of the bowl. Turn out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn to coat. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.
Deflate the dough, and turn it out onto a lightly floured surface. Divide the dough into 12-14 equal pieces, and form into round balls. Place on lightly greased baking sheets at least 2 inches apart. Cover the rolls with a damp cloth (or greased saran wrap), and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
Bake for 12-13 minutes in the preheated oven, or until golden brown.

Pulled Pork Sandwiches


Pulled Pork Sandwiches

3 to 4 pounds boneless pork shoulder (I use whatever pork roast is on sale)
1/4 teaspoon fresh ground pepper
1/4 teaspoon salt
2 cups water
1 tablespoon hickory flavored liquid smoke (Found by the BBQ sauce)
2 cups barbecue sauce

Rinse the pork shoulder and pat dry. Rub salt and pepper over the pork and place in a slow cooker. Add water and liquid smoke. Cook on low setting for 8 to 10 hours, until the pork is very tender.

Remove the pork from the slow cooker and discard the remaining liquid. Shred the pork using a couple of forks. Place the meat back in the slow cooker along with the barbecue sauce and continue to cook for another 20-30 minutes until the pork is hot again. Serve on buns with extra barbecue sauce.

Simple Crock Pot Chicken


Simple Crock pot Chicken -
**The picture is deceiving.  You can't ever get it to come out of the crock pot whole.  It is so tender it just falls apart.**

Whole Chicken
1 Whole Onion
2-3 Whole Garlic Cloves
Salt & Pepper

Recipe is best if you cook in crock pot on low for at least 8 hours.  Skin your chicken.  The skinning part is gross but it is so much better than your chicken swimming in fat.  Once the chicken is skinned and rinsed you are ready.  Cut your onion in half and put in the cavity of the chicken.  Shove the garlic cloves in there as well.  Rub the chicken all over with salt and pepper.  I use about one and a half teaspoons of salt on a good sized chicken.  I then generously sprinkle pepper all over.

I always spray my crock pot with non-stick cooking spray for easy clean up.  I lay the chicken in the crock put, breasts down and that's it.  Once cooked, your chicken will literally fall apart as you take it out.  So have your serving dish ready.  I then strain the liquid in the crock pot and use it for gravy for the mashed potatoes.
